Tzatziki Sauce

Vegan Gyro made with homemade seitan and cashew Tzatziki sauce.

The recipe for the Tzatziki sauce is below along with how I made this Gyro.

 

Cashew Tzatziki sauce:

-1/2 cup cashews -1-2 tbsp of fresh dill -1 tbsp of lemon juice -1/2 cup of chopped cucumber -1/2 clove of garlic -salt and pepper to taste -water to thin it out

Blend until smooth!

 

For the Gyro meat, I marinated the seitan in..

-lemon juice -olive oil -garlic powder -oregano -salt and pepper

Just grill your sliced seitan in a skillet until golden brown.

 

Stuff a whole wheat pita pocket with romaine lettuce, sliced onions, tomatoes and your grilled seitan. Top with the Tzatziki sauce and enjoy!
