Super Creamy Mac N Cheese


Ingredients: -1/2 cup raw cashews -1 1/2 cups of Silk almond milk (unsweetened) -1/4 - 1/2 cup nutritional yeast -1 small carrot, peeled -2-3 garlic cloves -1 tbsp of vegan butter -1 tbsp of arrowroot powder

-1 tsp of mild miso paste -salt, pepper, paprika, garlic and old bay seasoning to taste

Directions:

-Blend ingredients together in a high speed blender until completely smooth

-Transfer to a small sauce pan

-Simmer for a few minutes until thickened

-Pour over your favorite cooked pasta and enjoy!!

 

Notes:

As you can see pictured, I have added in a few extra ingredients. As optional you can add in many different ingredients to spice up your mac & cheese.

Here I have added chopped sundried tomatoes and spinach. I mixed these ingredients into the cooked, drained pasta. This helps the spinach to wilt.

Another great add in is cooked broccoli, my kids love this mac & cheese recipe and it's a great way to get in your greens!
