Baked "Crab" Cakes


Ingredients: -1 jar of hearts of palm (14oz), drained -1 cup of cooked chickpeas -1 cup panko breadcrumbs -1 celery stalk, chopped -1/4 cup vegan mayo -2 tsp dulse flakes -2 tsp lemon juice -1 tsp mustard -1-2 tsp old bay -pepper to taste Tartar slaw:

-2 cups of cole slaw mix or shredded raw cabbage -1/2 cup of vegan mayo -1/2 a pickle, finely chopped -1 tsp of lemon juice -1 tsp of fresh dill Mix ingredients and chill in the fridge while your cakes are cooking.

"Crab" cake Instructions: -Pulse chickpeas lightly to break them up, don’t grind them down, put in a large bowl. -Pulse hearts of palm separately (same as the chickpeas), then add to the bowl. -Combine the remaining ingredients into the bowl and mix well. -Form your mixture into 8 patties and bake at 400 for 20-30 minutes or until golden brown. Serve on a bun, with the tartar slaw or eat them alone and enjoy!!
