Not So Traditional "Meat" Loaf


Ingredients:

1 cup of buckwheat 1 cup of lentils, lightly mashed 3/4 cup of chickpeas 1/2 cup of walnuts 1 roasted carrot 1/2 cup breadcrumbs 1/4-/12 cup of nutritional yeast 1 small shallot 4 garlic cloves 1 tbsp of ground fennel seeds 2 tbsp almond milk (or more if not moist enough) 2-3 tbsp of ketchup 1 tbsp molasses 1 flax egg

Glaze:

1 can of tomato paste 2 tbsp of coconut aminos 1 tbsp of molasses 1 tbsp of coconut sugar 1/4 cup of ketchup

Mix all ingredients well.

"Meatloaf"instructions"

-Pulse your buckwheat, chickpeas and walnuts, each separately and very lightly in a blender. Do not fully blend up. -Mince your garlic, shallot and carrot in your blender. -Add all blended ingredients into a large bowl, then add in the remaining ingredients, mix well. -Mold mixture into a 9 inch loaf pan, lined with parchment paper. -Bake at 375 for 30 minutes, then add your glaze and baked for another 15-20 minutes.
