Buffalo Potato Bites
I came up with this lovely idea during the search for a Saturday night snack. This combines my two absolute favorite things!
Method: -Dice 2 large potatoes into bite sized pieces, place into a tupperware, season with your favorite spices (I used salt, pepper, smoked paprika, chili powder, garlic powder, onion powder & ancho chili powder).
-Then drizzle with a little bit of olive oil, put the lid on and shake really well to coat potatoes. Bake at 425 for 40-45 minutes on a stone pan ( I can't vouch for time on a non-stone pan). Then mix 1 tsp of dairy free butter (melted) with 3-4 tbsp of hot pepper sauce. Throw your cooked potatoes back into a tupperware, pour the sauce over top, place the lid on and shake well. Serve with your favorite sauce! :)
Notes: For the sauce pictured, I mixed some Just Mayo with a little bit of water, garlic powder and Italian seasoning. My husband said it reminded him of a buttermilk ranch. ENJOY!! :)
