Lazy Stuffed Cabbage Bowl


Ingredients:

1 large head of cabbage, cored and chopped

2 large yellow onions, chopped

6 garlic cloves, minced

5 large carrots, shredded

2 - 10 oz packages of mushrooms, sliced

1 - 6 oz can of tomato paste

1 - 28 oz can of crushed fire roasted tomatoes

1 - 14.5 oz can of crushed fire roasted tomatoes

1 -2 cups of low sodium vegetable broth

2 cups of cooked brown rice

Salt and Pepper to taste

Directions:

-In a large stock pot, sauté the onions and garlic for about 5 minutes.

-Add in the carrots and mushrooms, cook for 3 minutes.

-Add in the remaining ingredients, minus the rice.

-Simmer with a lid on until cabbage has cooked down (nice and tender) and everything is well incorporated.

-Add in your rice and cook for 3 minutes.

-Pull off the burner, allow to cool and enjoy!!

 

Notes:

*We enjoyed this with some cashew sour cream and it was so lovely and creamy, I highly recommend adding this in. If you enjoy a nice spice like I do, try adding in some red pepper flakes!

*This recipe will make a lot, so you will have leftovers. It's a really great recipe if you do weekly meal prepping as well.
