Instant Pot BBQ Pulled Jackfruit


Bbq sauce:

1 - 28 oz can crushed fire roasted tomatoes

1/2 an onion

5 medjool dates, pitted

1/3 cup molasses

2 tsp apple cider vinegar

1 tbsp garlic powder

1 tsp pepper

1 tsp spicy brown mustard

1 tsp smoked paprika

a pinch of salt

a pinch of red pepper flakes (or more for a spicier flavor)

Jackfruit:

2 - 17 oz cans of green jackfruit in water, drained*

Instructions:

-Add all BBQ sauce ingredients into a high speed blender

-Blend until ingredients are completely combined/pureed

-Pour Bbq sauce into your instant pot

-Pour both cans of jackfruit into the sauce and mix will

-Set your instant pot to sealed

-Using the manual setting, cook for 20 minutes at high pressure

-Once the time goes off, hit cancel and allow for a natural pressure release.

-Using oven mitts, pull the cooking pot out and place onto another oven mitt.

-Using a potato masher, mash up the jackfruit to help shred/separate it*

-Stir everything together very well, to make sure your jackfruit is coated.

Serve immediately or use keep warm setting until ready to cook.

 

Notes*

1. You can find canned green/young jackfruit at most Asian Markets.

2. You can also use a fork to pull the jackfruit apart, but a potato masher is much quicker.
